This is a large-volume premix that is packed with the tastes associated with Christmas time, which makes it ideal for hosting a festive gathering. Save the extra syrup you can use for brunch beverages, sweets, or to mix another batch of the drink.

Ingredients for the Clementine Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
Ingredients for the Drink (yields 850ml, serving 10)
400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish
Method
To prepare the Cordial: Combine every items in a pan, bring to a gentle boil, agitating until the sugar dissolves. Next, turn off the stove and let it to cool completely. Pour to a sealable bottle, cap it and store in the fridge, it will last for about one month.
To make Batch Mix: Combine every liquids in a big jug, leave to sit for one hour, then filter it best through muslin, to ensure it's perfectly clear.
To serve: Measure 85ml of your batch mix into a stirring glass packed with ice, and stir gently for a minute until cold. Filter into a frosted cocktail glass or equivalent, top with some cranberries and complete it using a brief mist of the essential oil over the top.
